Heavy Metal Residues Depuration in Mantis Shrimp by Cumin Extract

Abstract

The mantis shrimp (Squilla mantis), a marine crustacean, inhabits ocean waters and is known for its insect-like, powerful claws used to aggressively capture a variety of marine prey. Despite their nutritional values, they can be used as biomarkers for seawater pollution from toxic heavy metals. (Cd), (Pb), (As), and (Hg) have properties to bioaccumulate and biomagnifies in aquatic organisms; besides, they are causing severe health hazards to humans even at low concentrations. The mean values of (Cd), (Pb), (As), and (Hg) residues in examined mantis shrimp samples before treatment were 0.3880, 2.233, 15.803, and 0.230 µg/g, respectively. Cumin, an herb used as a spice in Egyptian food, has antioxidant and chelating effects. Therefore, trials were carried out by using different concentrations of cumin aqueous extract
(0.5% and 2%) to reduce the residual level of toxic heavy metals, combined with boiling. Incredibly, when using 0.5% aqueous extraction of cumin, the reduction efficiency for (Cd), (Pb), (As), and (Hg) was 70.22%, 50.82%, 43.92%, and 89.86%, respectively. Although the highest reduction efficiency was obtained with 0.5% cumin combined with boiling, with a reduction efficiency of 70.99%. Estimated daily Intake (EDI) for (Cd), (Pb), (As) and (Hg) was 0.269, 1.549, 10.98, and 0.1596 (μg/g/day), respectively, while Health Risk (HR) for (Cd), (Pb) and (Hg) was 0.269, 0.387, and 0.318, respectively, less than 1, which meaning that there negligible risk on human health except HR for As equals 36.6, more  than 1, so that has high potential risk; overall Squilla Mantis has hazard index (HI) more than one, indicates high potential risk hazard.
